Day 14: Brewing a Fermented Washed Colombia with Hario Switch & V60 (Swerl) | Advent Calendar 2025

Day 14 of the Coffee Advent Calendar 2025! ☕ Today I’m brewing a fermented washed Colombian coffee from Swerl. I started with the Hario Switch using a double immersion approach, but the drawdown was much slower than expected, resulting in bitterness and dryness in the cup. Based on the process, I assumed the coffee would drain faster — and I was wrong. After two attempts with the Switch, I moved to the V60 and followed the roaster’s suggested recipe, managing to achieve a better result.
