Day 08: Hario Switch Brewing Ethiopia Natural Coffee (Swerl Coffee) | Advent Calendar 2025

Day 08 of the Coffee Advent Calendar 2025! ☕ Today I’m brewing a natural Ethiopian coffee from Swerl (Sweden) using the Hario Switch with a hybrid blooming technique. Even though it was a natural, the roast was very light and dense, so I treated it somewhere between a natural and a washed. The first cup was surprising: slow drawdown, slightly fermented profile. To fix it, I had to change two variables — going coarser and reducing the total brew water — and finally brought the cup into balance. A challenging coffee today, but a great learning experience.
