RECIPE: 1 cup vegetable oil, more if necessary while sautéing onions and spices Sauté until very soft: 24oz Yellow Onion 3 large onion diced garlic 8 tbsp minced ginger 8 tbsp minced Add ground spices: Grind following 6 whole spices in a coffee grinder: 15 Cardamom Pods shells removed 3 Cinnamon Sticks (2 inch each) broken up 5 tbsp Coriander Seeds 4 tsp whole black peppercorns 24 Cloves 3 tsp Fennel Seeds Add: 2 tbsp Red Chili Powder, 3 tbsp for spicy 3.5 tsp ground turmeric 3 star anise (do not grind) 4.5 tsp Coarse Salt Sauté for a minute or longer to toast spices. Add a little more oil or a little water to make sure spices get toasted and don't burn. Add 4 cups water, then lamb and stir well Cook meat/stew function 35 mins Release pressure Taste and adjust salt, sauté to reduce liquid if necessary or add half and half or coconut milk.
