This spicy rice noodles recipe was inspired by the Thai Noodle recipe called Pad See Ew, while it is not exactly the same, it has quite a bit of similarity. This recipe is not what I eat in a day regularly, but I look at it more as a treat because the noodles are processed food even though they are only 2 ingredients. If you are following a Vegan Plant Based Diet there are a lot of foods that are vegan but are processed and in my opinion, for optimal health, it is best to keep those foods minimal.
