This Garlic Eggplant Recipe is 100% Vegan. I love making recipes like this one with vegetables that are not my favorites and overcoming the discomfort of working with something that I am not as familiar with because of past experiences eating it in other peoples recipes. I have given eggplant a second and 3rd and fourth chance and have learned to really like it in many variations, this combination in a salad with soy sauce is my favorite so far.
