Hey Guys! Today we are making supper good pumpkin pie. I know you might be wondering why it's brown. Thats because we used way to much cinnamon. KeepSm:)ing Pumpkin Pie For the pumpkin: Ingredients: Use 1 1/2 pounds of skin-on, raw pumpkin to yield 2 cups of mashed. Directions: 1. Preheat the oven to 375 degrees F. 2. Remove the stem from the pumpkin and scrape out the insides, discarding the seeds. 3. Cut the pumpkin in half and lay the pieces cut-side down on a rimmed baking sheet lined with aluminum foil. 4. Rub olive oil all over the skin and bake until fork-tender, about 1 hour. Let cool. For the easy pie crust: Ingredients: 2 cups all-purpose flour, plus more for flouring 1/4 teaspoon salt 2/3 cup (11 tablespoons) cold unsalted butter, cut into 1/2-inch pieces Directions: 1. While the pumpkin is cooking, make the crust. In a large bowl, combine the flour and salt. 2. Add in the butter and work into the dough with a fork until the mixture is crumbly. 3. Stir in just enough cold water (4 to 5 tablespoons) with a fork just until the flour is moistened. 4. Divide the dough in half, shape each half into a ball and flatten slightly. Wrap 5. one ball in plastic wrap and refrigerate for another use. 6. Roll out the remaining dough ball on a lightly floured surface to a 12-inch round. 7. Transfer to a 9-inch-diameter glass pie dish. 8. Fold the overhangs under and crimp decoratively. 9. Pierce the dough all over with a fork. 10. Chill in the refrigerator for 15 minutes. 11. Line the crust with foil, fill with dried beans or pie weights and bake until the sides are set, about 12 minutes. 12. Remove the foil and beans. 13. Reduce the oven temperature to 350 degrees F. For the filling: 1 15-oz can pumpkin puree (approx. 1 3/4 cups) 1 14-oz can sweetened condensed milk 2 large eggs, room temperature 2 tsp of pumpkin pie spice (see recipe below) 2 tsp vanilla extract Pumpkin Pie Spice 1/4 cup ground cinnamon 2 tbsp ground ginger 2 tsp ground cloves 1 tsp ground nutmeg Directions: 1. Preheat oven to 400F. 2. In a large bowl, whisk together pumpkin puree, sweetened condensed milk, eggs and pumpkin pie spice. 3. Add in vanilla. Pour into prepared crust. 4. Turn the oven down to 350F and bake for 45-50 minutes, or until the pie filling is set and jiggles only slightly when the pan is jiggled. 5. Allow pie to cool completely before slicing and serving. 6. Pie should be covered with plastic wrap and stored in the refrigerator. Enjoy!
