In this video I attempt to make an Indonesian dish made from Cassava leaves. In Indonesian it is called Gulai Daun Singkong. Keep smiling! Gulai Daun Singkong Ingredients: 2 bunches (approx. 250 grams) young cassava leaves (if you can’t find cassava leaves you may substitute with kale, collard greens, turnip greens, or spinach leaves) 1 ¾ cups (one 13.5 fl oz can) (approx. 400 ml) coconut cream unsweetened http://amzn.to/1IYBxiR 2 bay leaves, crushed 0.8 inches (2 cm) galangal (may substitute with ginger), crushed 2 T dried shrimp 2 T oil, for sautéing Spices blended together: 5 large red peppers 6 shallots 4 cloves of garlic 0.4 inches (1 cm) ginger 1 tsp salt Garnish: ½ cup (50 grams) fried salted anchovies. Directions: Boil cassava leaves till well done and tender. Drain, wring out, slice and set aside. Heat oil, sauté blended spices together with bay leaves, galangal, and dried shrimp till fragrant. Add coconut cream, stirring constantly at a simmer. Add cassava leaves and cook at a simmer until spices seep into the leaves and the coconut cream decreases. Remove from heat, sprinkle with fried salted anchovies. Serve with white rice. Enjoy while hot!
