Tools you will need: Hello Kitty Cake Pan https://goo.gl/5qMtnZ Spatula Whisk Measuring cups and spoons Mixing bowl Oven mit/potholder Mixer (hand or standing) https://goo.gl/0KT5K1 Food Processor (optional) https://goo.gl/3HbqCU Knife Toothpicks Cooking rack Large Serving Plate or Tray Cutting Board Ingredients you will need: Cake: 1 1/2 cups all-purpose flour 3/4 teaspoons baking powder 1/2 cup butter (soften) 1 1/4 cup sugar 2 eggs (room temperature) 2 teaspoons vanilla extract 1/2 cup whole milk (use buttermilk for a moist cake) Whipped Cream frosting: 2 cups of heavy whipping cream 4 tablespoons of granulated sugar (add more if you like it sweeter) Pineapple middle filling: 1/2 cup whipped cream 2 cups chopped and drained pineapple Candy Melts: Bow: Approx. 35 pink candy melts https://goo.gl/YUGu50 Whiskers: Approx 3 black candy melts https://goo.gl/XldtMi Jelly Birds Eggs Jellybeans: https://goo.gl/3JqMbw 2 black for eyes 1 for nose 2 cups of coconut flakes (sweeten or unsweetened) Directions: Cake: -Preheat oven to 350 degrees. -Grease Hello Kitty cake pan with butter and dust with flour. -Whisk flour and baking powder together. Set aside. -Mix the butter and sugar together until creamy. -Blend in eggs one at a time. -Add vanilla extract. -Gradually add in the flour and baking soda mixture until thoroughly blended to form the batter. -Add in the milk until smooth. -In a greased and dusted cake pan, pour in the batter and spread out evenly throughout the pan ensuring that the sides and ears are covered. -Bake in the pre-heated oven for 30 to 35 minutes. -Poke center with toothpick. If there is no batter, it is done! -Take the cake out of the oven and cool for 10 minutes before taking it out of the pan. -Turn out the cake pan onto a cooling rack and let it cool completely. Time to Frost and Decorate: -Cut cake in half horizontally to make 2 layers. -Place bottom on plate that you plan to serve in. Whipped Cream: -Whisk together heavy cream and sugar until stiff peaks form. Can be done in a mixer or by hand. Yields about 3 to 3 1/2 cups whipped. Layer 1: -Chop pineapple into small pieces (can do by hand or food processor). -Drain pineapple. -Mix 1/2 cup of whipped cream with pineapple to form a creamy mixture. -Evenly spread mixture on the bottom of cake. Layer 2: -Spread 1 cup of whipped cream on top of pineapple mixture until evenly covered. Top of the Cake: -Place the top of the cake on top of the whipped cream layer ensuring it it straight. -Place toothpicks where eyes and nose are located. -Spread 1 1/2 cups of whipped cream on top of the cake ensuring the entire cake is covered. -Chill for 1/2 hour. Coconut Topping: -Sprinkle coconut flakes all over the cake until fully covered. Eyes and Nose: -Take out the toothpicks placed for the eyes and nose, and place in the Jelly Birds eggs. -Press lightly until they stay in place. Candy Melts: Whiskers: -Draw 2 sets of 3 whiskers (trace from pan) on paper to use as a template. Put a piece of parchment paper over it to trace with candy melts. -Melt black candy melts for 20 seconds in microwave. Mix. If not melted add another 10 seconds. Repeat until melted. -Get a toothpick to spread the candy melts over whiskers on the parchment paper. Let set (refrigerate). -Line up the first top whisker with the top of the eye. Evenly place the other 2 under it. Continue with other side. Bow: -Melt pink candy melts in 20 second intervals for about 3 times. Mix after every 20 seconds. If not melted by the 3rd time, keep repeating until thoroughly melted. -Pour into the bow section of the cake pan. Let it set. -Turn pan over on parchment paper until it pops out. -Place the bow in right side of the cake on top of Hello Kitty's ear. Finished!!
