Gather all the ingredients 2. Heat a large skillet or casserole pan on medium-high 3. Season chicken thighs with salt and pepper 4. Add olive oil to the pan once hot (tip: do the following test before adding the oil to make sure it's the right temperature and the chicken doesn't stick to the pan: Splash a drop of cold water on the pan, and if it's at the right temperature, it should skate across the pan in a large droplet instead of either fizzling, or splitting into tiny droplets) 5. Brown the chicken on both sides, then remove to a plate in batches (do not overcrowd the pan!) 6. While you leave the chicken to brown (this may take 20+ minutes total), this is your time to grate the zucchini, finely chop the garlic, wash and chop your spinach and basil 7. Once all chicken is removed from the pan, add the garlic and let it sizzle for a few seconds, then add the grated zucchini and let it soften for five minutes, stirring occasionally 8. Stir in the passata and cream, then place the lid on until the sauce reaches a boil 9. Add the spinach, basil, and the chicken and all its juices to the sauce, then mix well 10. Place the lid back on the pan and let it simmer for 10 minutes Optional - Grate parmesan over the top, either in the pan or when serving If making rice in an Instant Pot, use a 1:1 ratio of rice to water.
