Hi Foodies, Here is a Egusi soup recipe for you. Egusi known as melon seeds in Nigeria is rich in fats and proteins. The melon plant look similar to watermelon, this are harvested and left to rotten for easy removal of the seeds (melon seeds), this are rinsed and sun dried. The seeds first shell layer is removed (this can also be done by hand) and the melon seed appears as white. The white melon seed are then grinded into a powder egusi form. You can find egusi at the market with the shell on (slightly light brown), without it shell on (white) or grinded form. I hope you find this recipe helpful and straight forward.
