In this video, I will share our tips and tricks on how to keep your homemade tomato sauce fresh for months to come. This day we canned 3 different tomato sauces and it was challenging, but my sister and I pulled it off! Say goodbye to spoiled sauce and hello to delicious, fresh-tasting pasta dishes all year round! TOMATO PASTE (use 4oz jars) Citric Acid – 1/2tsp per Quart or 1/4tsp per Pint Lemon Juice – 2tbsp per Quart or 1tbsp per Pint Olive Oil – 2tbsp per Quart Sea Salt – 2tbsp per Quart Sugar – A little to breakup the bitterness from the lemon juice COOKING: Core and skin tomatoes. Put tomatoes in a big pot, bring to a boil and simmer for 5 minutes. Stir frequently so it doesn’t stick and burn. Run through a food mill or whatever you have to get rid of the seeds and skins. You will be left with tomato sauce. Pour in to backing pan(s). Add Citric Acid or Lemon juice, use only one of the other not both. Add all ingredients and stir in well. BAKING: Place baking pans in the oven at 350° for 1-4 hours depending how juicy sauce is. Check and stir sauce every 30 minutes so it doesn’t stick or burn. CAN: Put into jars. Pack with a spatula, clean rims, put on lids and rings. Put in canner and water bath for 15 minutes. PIZZA SAUCE 15 lbs Tomatoes 6 tbsp Olive Oil 3 cups Chopped Onions 4 Cloves Garlic 2 tsp Black Pepper 2 tsp Sugar (white, brown, molasses) 4 tbsp Parsley 2 tbsp Oregano 2 tbsp Basil 2 tsp Rosemary 2 tsp Sea Salt Cooking Sauce Core and skin tomatoes and put into slow cooker for several hours. Dip juice off of the sauce every hour until it’s not much juice left. Use a blender to puree the tomatoes. Pour sauce in a big pot. Sautee onions and garlic in Olive Oil. And, add all ingredients to the pot. You can add tomato paste to thicken sauce. Season to taste, add garlic powder or more sugar or whatever you want. Bring to a boil and let simmer for 5 minutes. Canning Sauce Add Lemon juice to jars. 2tbsp per Quart jar and 1tbsp per Pint jar. Add sauce and water bath for 25 minutes PASTA SAUCE Tomatoes 5 cups Chopped Onions (optional) 2 cups Bell Pepper (optional) 5 tbsp Italian Seasoning (if you have your own) 6 tbsp Garlic powder 6 tbsp Onion powder 5 tbsp Smoke Paprika (optional) 5 tbsp Tony Chachere’s Creole Seasoning Basil Oregano Rosemary Parsley Sugar Salt Pink (optional) Lemon juice (Season to taste. Use whatever you want, and how much you want.) Core all tomatoes. Blanch and skin the tomatoes. Cut tomatoes into quarters or less and put into crockpot and cook down. Dip off tomato juice every 2 to 3 hours. Put into big pot. Add onions and bell peppers, then all dry ingredients. Use a hand blender or mixer to make it saucy. Bring to a boil, then turn down to medium and simmer for 30 minutes. To Can Add 2 tbsp of Lemon juice to Quart size jars, and 1 tbsp to pint size jars. Water bath for 35 minutes.
