Lemon Icebox Cake 6 oz. Cream cheese, softened 3/4 c. Powdered sugar 2 1/2 c. Heavy cream Zest of 3 lemons 2-3 T. Lemon Juice 1 (or 2) box Nilla Wafers 1-2 c. Lemon curd Cream the cream cheese and powdered sugar together until smooth. Add lemon juice to taste. Add heavy cream and continue to mix until medium peaks form. Fold in lemon zest. Spread a little of the cream mixture onto the bottom of a 9x13” pan (to prevent cookies from sliding around). Cover with a single layer of Nilla Wafers. Top cookies with 1/2 of the cream mixture, then 1/2 of the Lemon curd mixture. Repeat layers: cookies, cream, then curd. Top with extra cookies. Freeze for at least 3 hours or overnight.
