Soak the black beans overnight. 2. Cook in a pressure cooker for 15 minutes until tender. 3. Drain the beans and set aside. 4. In a frying pan, heat olive oil and sauté the diced onions until soft and fragrant. 5. Add thyme, asafoetida, garlic powder, onion powder, chilli, and bay leaves. 6. Add the cooked beans and diced bell pepper. 7. Squeeze in the juice of 1 orange and mix well. 8. Let everything simmer and reduce until thick and rich. 9. Adjust seasoning to taste.
