Recipe for Tina’s Garri Jollof Ingredients: • 2 cups garri • canned tomatoes, blended • bell peppers • 1 onion, chopped • ginger & garlic • 2 tbsp oil • Salt to taste • Seasoning powder & lots of rosemary • Habanero pepper to taste & parsley Method: Blend onion, garlic, rosemary and parsley 1. Heat oil and sauté onions until soft. 2. Add the green blend and the the red blend blended tomatoes, peppers, and cook until reduced. 3. Add seasoning, and salt. 4. Stir in garri gradually until evenly mixed. 5. Cover and steam gently until soft and flavourful. Tina’s Traditional Egg Stew This rich tomato-based egg stew brings warmth and comfort, pairing perfectly with both Garri Jollof and rice. Ingredients • 6 eggs & a can of Tuna • canned tomatoes • 1 onion • 1 red pepper • 2 tablespoons oil • Salt and black pepper, to taste Method 1. Blend tomatoes, onion, and red pepper until smooth. 2. Heat oil in a saucepan and pour in the blended mixture. 3. Simmer gently until thickened and aromatic. 4. Season with salt and pepper. 5. Whisk the eggs and spread on top of the stew and then add two cans of Tuna. 6. Allow to simmer for a few more minutes before serving warm. Tina’s Secret Fluffy Rice Method A simple but beautiful technique that creates perfectly loose, tender rice every time. Ingredients • 2 cups white rice • 4 cups water • Salt, to taste • Baking paper / parchment paper Method 1. Rinse the rice thoroughly until water runs clear. 2. Bring water to a boil and add rice with a pinch of salt. 3. Cook until nearly tender, then reduce heat to low. 4. Place a sheet of baking paper over the pot before covering with the lid. 5. Allow the rice to steam gently until each grain becomes light, separate, and fluffy. Serve Garri Jollof alongside the egg stew, fluffy rice, and fresh greens for a complete Ghanaian-inspired family table — a meal made not only to nourish, but to bring hearts together. “Food tastes even better when it carries friendship, tradition, and love.”
