Asado is the traditional Argentine and Uruguayan way of grilling: live fire, adjustable height, low and slow, and big enough to cook a whole animal. And the truth is, you don't need an expensive custom rig to do it — you can build a serious asado grill yourself for a fraction of the cost. This is one of the most fun ways to cook I've ever tried. You control the heat by raising and lowering the grate, the wood and embers do the rest, and you end up with deeply flavored meat you simply can't get off a gas grill.
