Merry Christmas, y’all! In this video I’m making one of our holiday favorites—sweet potato casserole—and I’m keeping it super simple with a small can of yams. I mash them up really, really good because we like ours very smooth, not too chunky. Then I add an egg and some butter (I’m not gonna lie, I don’t really measure—I just pop it in there and hope for the best), plus brown sugar, and mix it all up until it’s nice and combined. After that, I pour in a little milk to get the texture just right before spreading it into a pan. Next up is my favorite part: the topping. I mix melted butter, brown sugar, and pecans, and I like my pecans really tiny, so I smash them up even more. Then it all goes into a 350° oven for about 40–45 minutes. My biggest tip is to watch the topping—if the top is still squishy, let it go a little longer. When it’s done, it should look golden and cozy, and it’s the perfect side for a Christmas meal.
