However, this time we're doing it with lime juice, which is the appropriate recipe breakdown. This drink is a sour forward cocktail with smokey mezcal flavor and a lingering moderate bitter bite. Not as bitter as a campari cocktail but the delicate flavors play well against the Aperol. And, the Aperol sweetness along with the Yellow Chartreuse work to "balance" the lime sour (but will ultimately not be able to keep away all that sour). Leaving us with a sour smokey delightful cocktail build.
