Windu, a Thai Gin Cocktail

Windu is a cocktail that ties Thai flavors and gin into a refreshing tropical and complex cocktail. Windu 10 oz Tinkerman's Gin Complex and Bright 7.5 oz Lime Juice 7.5 oz Thai Orgeat 6.25 oz Whole Milk 5 - 6 Thai Basil Leaves Plum Paste Combine gin, lime juice and thai orgeat into glass container Stir for 10 seconds Pour milk into a separate glass container Pour the cocktail into the milk container Let sit for at least 2 hours Place a Collins glass in the freezer Take a clean container and place a funnel with a coffee filter on top Gently pour the cocktail in the filter. You might not get the entire cocktail in the filter. Keep adding more as the funnel gets empty Remove Collins glass and paint a plum paste streak in the Collins glass Place back in freezer Measure out 4 oz of the cocktail into a mixing glass Take the Thai Basil, smack it and place in mixing glass Add ice Stir for 30 seconds Take Collins glass out of the freezer Place a long clear ice cube in the glass, being careful not to smudge the plum paste Strain cocktail into glass Plum Paste 100 Grams Plum Juice 1.8 Gram Pectin Place ingredients into a blender Place in blender Blend for 10 seconds Strain with cheesecloth Place in small food safe container Place in refrigerator until ready Join us for Happy Hour and receive some great perks! https://www.youtube.com/channel/UCo4DesjETO1ZN1_trn5NTPw/join Disclosure: We use affiliate links to sites where you can buy some of the products we use.
