(Feel free to screen shot the recipes from the video) Volume 1 https://www.acountry-life.com/product-page/a-country-life-vol-1-cookbook Volume 2 https://www.acountry-life.com/product-page/a-country-life-cookbook-vol-2 BEAR AND PINTO BEAN CHILI 2 T. olive oil 1 yellow onion, diced 2 tsp. minced garlic 2 jalapeno, seeded and diced (mine were tiny) 1 1/4 pounds bear hamburger 1/4 c. chili powder 1 T. ground cumin 2 tsp. dried oregano Kosher salt 1 1/2 c. chicken broth 14 oz. can diced tomatoes and liquid (I used fresh diced tomatoes) 3 pint jars of pinto beans, rinsed and drained Toppings: green onion, cilantro, tortilla chips and hot sauce Add oil to instant pot. Saute onion, garlic and jalapeno in instant pot for 5 minutes. Add meat and brown, about 10 minutes. Add in spices along with 1/2 tsp. salt. Stir around for about 1 minute. Add broth, tomatoes and beans. Set to sealing. Select high pressure for 20 minutes. Allow to naturally release for 20 minutes before venting remaining steam. Open pot and stir chili. Taste and add salt if needed. I added another 1/2 tsp. Ladle into bowls and serve with toppings of choice. WHITE CHICKEN CHILI 1 c. dried great northern beans or cannellini 4 c. water Kosher salt 1 T. olive oil 2 Anaheim green chiles (I used 1 large), seeded and diced 2 jalapenos (mine were tiny) seeded and diced 2 celery stalks, diced 1 medium yellow onion, diced 2 tsp. minced garlic (from a jar) 2 tsp. ground cumin 2 tsp. dried oregano 1 tsp. ground coriander 1/4 tsp. cayenne pepper 1 1/2 pounds (or 2 large boneless, skinless) chicken breasts, cubed 1 c. chicken broth 1 c. sour cream Toppings: cilantro, shredded Monterey jack cheese, green onions Combine beans, water and 1 tsp. salt in instant pot. Rinse and sort beans. Add to pot. Set to sealing and pressure cook on high for 30 minutes. Naturally release for 15 minutes before releasing remaining steam. Drain beans and rinse pot. Add oil and saute peppers, celery, onion and garlic for 5 minutes. Add spices and stir for 1 minute until very fragrant. Add beans, chicken and broth. Stir well. Set to sealing; pressure cook on high pressure for 10 minutes. Naturally release for 20 minutes. Release remaining steam. Open pot and stir in sour cream.
