Today I'm sharing all my country cooking including venison philly cheesesteaks, homemade bagels (they're so easy), boundary waters berry dessert, creamy peanut dessert and from a box gyros. The desserts are excellent for spring or the upcoming Easter season. I finally get back into Aldi (it's been a while) and it didn't disappoint. Aldi prices are the best, aren't they? As I whip up a berry dessert I fill you all in about the upcoming frost season. Scroll down for links to purchase my cookbooks. Boundary Waters Berry Dessert Crust: 1 1/2 c. flour, 1/2 c. sugar, 1 c. butter, 3/4 c. oatmeal Pulse until course crumbs in food processor. Press into ungreased jelly roll (10x15 inch) pan and bake at 400 degrees for 10-12 minutes until edges are lightly browned. Cool completely. Topping: 8 oz. cream cheese, 3/4 c. powdered sugar, 8 oz. Cool Whip, 1 qt. berries Blend cream cheese and sugar until smooth. Fold in Cool Whip. Spread over cooled crust and top with washed and dried berries. Chill before serving. This is amazing!! Creamy Peanut Dessert 1 1/2 c. graham cracker crumbs 1/2 c. salted peanuts 1/4 c. butter, melted 2 T. peanut butter I like to mix this all in a food processor. Reserve 1/2 c. crumbs for topping. Press in greased 9x13 pan. Refrigerate for 30 minutes. Filling: 8 oz. cream cheese, 1/2 c. peanut butter, 1/2 c. sugar, 2 tsp. vanilla, 16 oz. Cool Whip, 3-4 Tbsp. chocolate syrup Cream together cream cheese and peanut butter, then add in sugar and vanilla and blend until smooth. Fold in Cool Whip. Spread over crust. Drizzle with chocolate syrup if desired and sprinkle over reserved crumbs. Freeze overnight, then take out 15 minutes before wanting to cut and serve. Or freeze for a short while and serve as a soft fluffy dessert. Either way it's yummy! My cookbooks are available for purchase.
