Today I'm sharing the meals I'm serving up to our cranberry harvest crew as well as my family suppers. Cranberry harvest brings in lot of hungry mouths at the end of the day so I like my meals to be something they all look forward to. Even the ones who said they thought they didn't like Calico Beans ended up enjoying them almost as much as I did because they were hungry!! Super Nachos meat, refried beans, salsa Amber's Creamy Potato Soup 1 bag of frozen hash brown cubes 28 oz. chicken broth (or water and bouillon) 1 can cream of chicken soup 1/2 c. chopped onion 1/4 tsp. pepper 8 oz. softened cream cheese Put all ingredients except cream cheese in crockpot. Cover and cook on low 4-6 hours. Then put cubes of cream cheese in and cover for at least 30 minutes. More is better. Then stir until cream cheese is melted into soup. Serve in bowls with shredded cheese, bacon bits and green onion. Calico Beans 1/2 - 1 pound bacon, cooked until almost crisp 1 pound hamburger 1 c. chopped onion 1 can pork and beans 1 can butter beans 1 can pinto beans 1 can green lima beans 1 can kidney beans 1 can garbanzo beans 1/2 c. ketchup 1 tsp. salt 1 T. vinegar 1 tsp. dry mustard 3/4 c. loosely scooped brown sugar Brown hamburger with onion. Then put into crock pot with bacon and remaining ingredients. You may or may not drain your beans. It's up to you. I often will drain out a little of the liquid, but not all because it adds good flavor. Slow cook until bubbly and flavors have melded. This can also go into a 350 degree oven for 40 minutes. Soft Sandwich Bread 2 c. barely warm water 2\3 c. white sugar (scant 2/3 c.) 1 1\2 tsp. salt 1\4 c. olive oil 6 cups flour (I always use bread flour) 1 1\2 Tbsp. yeast Place all ingredients in bread machine. Set to dough cycle. It might overflow your bread machine or lift the lid as it rises. It's a lot of dough and makes 2 large loaves. I use extra long bread pans similar to these https://amzn.to/4nixN5f Both of mine are vintage and irregular sized. Once the dough is complete; turn it out onto floured surface. Press into a rectangle and roll up tightly. Place in greased pans. Cover and allow to rise until about 1 inch (or more) above edge of bread pan. Bake at 350 degrees for about 30 minutes depending on how dark you like the crust. Brush tops with butter for a soft crust if you like. Stores well at room temperature for about 5 days. I sometimes cut each loaf in half; wrap in plastic wrap, place in freezer bag and freeze until I need more bread. It thaws quickly. Peanut Butter Swirl Bars 1/2 c. peanut butter 1/3 c. butter 3/4 c. brown sugar 3/4 c. white sugar 2 eggs 2 tsp. vanilla 1 c. flour 1 tsp. baking powder 1/4 tsp. salt 1 c. chocolate chips Mix together everything except chocolate chips. Spread into greased 9x13 pan and top with chocolate chips. Bake at 350 degrees for 5 minutes. Take out and run knife through to swirl chocolate into the batter. Bake another 20-22 minutes.
