He Wants Me to Experience the Old School Diesel

For the fish tacos on this last day of cranberry harvest I basically made them like I do for shrimp tacos except I quick pickled the cabbage and red onion instead of making a creamy Cole slaw sauce. These were so good! Even Joe ate them and he doesn't like any kind of tortilla. If you have a gas stove definitely char the corn tortillas over the flame; it adds so much flavor. CRANBERRY CAKE 1 c. sugar 2 T. melted butter 1 egg 1/2 c. milk 2 c. flour 2 tsp. baking powder pinch of salt 2 c. cranberries, whole or halved (we like them whole) Beat together sugar and butter. Mix in egg and milk. Then mix in dry ingredients and fold in cranberries. Spread cake batter in Greased 9 inch deep dish pie plate. Bake at 375 degrees for 35-45 minutes or until toothpick comes out clean. My cookbooks are available for purchase.
