Food & Farming Wisconsin's State Fruit...the Cranberry!

We farm Wisconsin's state fruit the cranberry, which are harvested in September and October. We're in the middle of harvesting our early varieties and I wanted to bring you along for some of the food and some of the farming. Many of my recipes are contained in my 2 cookbooks (each has 150 recipes) and are available for purchase at my website (see link below) and at a few local retailers. Since my soft sandwich bread recipe isn't in either cookbook I just have to share it here for you because it makes the softest most delicious bread. Soft Sandwich Bread 2 c. barely warm water scant 2/3 c. white sugar 1 1/2 tsp. salt 1/4 c. olive oil (or oil of choice) 6 cups bread flour (all purpose will work, but it won't be as squishy and soft) 1 1/2 Tbsp. yeast I place all the ingredients in my bread machine, hit the dough cycle and then turn it out to a floured surface. Cut in half and shape into 2 loaves. Place in greased pans, cover and let rise until dough is about an inch over the side of the bread pan. Then bake at 350 degrees for about 30 minutes until top is golden (or a little darker) brown and sounds hollow when thumped.
