It's almost crazier than Christmas! As Catholics we celebrate Halloween with costumes and trick-or-treating same as everyone else, but then.....the very next day we celebrate the Saints that have gone before us with Mass, Saint costumes, and a potluck. It's a very full 2 days for sure not to mention the prep work for all the costumes. In case you're looking for the products I used on my face, I've linked them below. Also the breads and lasagna recipes are typed out below. Small loaf pans https://amzn.to/4hzmpQz Banana Bread (vol. 2, pg. 44) 1 c. sugar 1/2 c. shortening, part butter 2 eggs, beaten 1/3 c. sour milk 2 or 3 crushed bananas 1/2 tsp. salt 2 c. flour 1 tsp. baking soda 1/2 c. nuts Put all ingredients in mixing bowl and mix just until it all comes together. Place in 1 large or 2 smaller greased loaf pans.. Bake at 300 degrees for 1 hour or more. One large loaf may take 75 minutes until a toothpick inserted comes out clean. This is always moist and so delicious. Texas Rye Bread (vol. 2, pg. 41) 2 c. warm water 2 pkg. or 4 1/2 tsp. yeast 3/4 c. brown sugar 1/2 c. oil 1/2 c. molasses 2 c. rye flour 4-5 cups white bread flour 1 tsp. salt Mix warm water and yeast. Let stand for a few minutes. Add remaining ingredients and knead until smooth. Let rise until double. Divide into 2 loaves. Let rise again in greased loaf pans. Bake at 300 degrees for 1 hour. We like this toasted. Focaccia Bread (vol. 2, pg. 40) 3/4 c. + 3 T. warm water 3 T. butter 2 T. nonfat dry/powdered milk 3 T. sugar 1 1/2 tsp. salt 3 c. bread flour 2 1/4 tsp. dry yeast Place all ingredients in pan of bread machine. When done, turn out and roll out to fit a 10x15 or jelly roll pan. Grease pan and stretch the dough into the corners. Cover and let rise for at least 20 minutes in a warm spot or until double. Make indents in top of dough. Brush with oil and sprinkle with Parmesan cheese, garlic salt, crushed rosemary, thyme, oregano, pepper. Bake at 400 degrees for 13-15 minutes. Watch closely so it doesn't overbake. Cut into 24 squares and serve with any Italian meal. Easy Lasagna (vol. 1, pg. 19) 1 lb. hamburger, browned and drained 1 (32 oz.) jar spaghetti sauce 1 1/2 c. water 1 T. Mrs. Dash seasoning blend 2 c. mozzarella cheese, shredded (use more if you like cheese) 1 c. cottage cheese 9 lasagna noodles (uncooked) Proceed as I did in video. Spray foil with cooking spray. Cover tightly!! Bake at 350 degrees for 1 hour. Allow to rest for at least 15 minutes so it cuts and serves nicely without all the filling falling out of from the noodles. Honey Whole Wheat (I used only white flour today) Bread 1 1/3 c. milk or water + a heaping Tbsp of powdered milk 1/4 c. water 2 T. honey or sugar 4 tsp. butter 2 c. whole wheat flour 2 c. bread flour 1 tsp salt 1 1/4 tsp. yeast (I usually heap the 1/4 tsp. part) Place all ingredients in pan of bread machine. When cycle is complete turn out onto oiled surface. Shape into one nice loaf and place in greased bread pan. Cover and allow to rise until doubled. Bake at 350 degrees for 30-35 minutes or until crust is golden brown. Butter the top for a softer crust.
