Cooking With Cranberries for our Harvest Party

Cranberries are available today in grocery stores near you and today I'm sharing a couple of delicious ways to use all the fresh cranberries you are stocking up on this fall. CRANBERRY BARS w/ CREAM CHEESE FROSTING 2 eggs 1 1/2 c. sugar 1/2 c. butter, softened 1 1/2 c. flour 1 tsp. baking powder 1/2 tsp. salt 1 tsp. vanilla extract 2 heaping cups whole cranberries 1/2 c. chopped nuts (walnuts or pecans) Mix all together as I did in video; spread in greased 9x13 baking pan and bake at 350 degrees for 40-45 minutes. Cool. Then frost with cream cheese frosting. 4 oz. cream cheese, softened 1/4 c. butter, softened 1 T. milk 1 tsp. vanilla 2 c. powdered sugar Mix until ultra creamy and spread on cooled bars. Cut and serve; everyone will love these tart yet sweet treats! Cranberry Waldorf Salad 2 heaping cups cranberries, pulsed in food processor until mostly in tiny bits (we don't mind a few larger cranberries, too. Then stir in 1/2 c. sugar and let rest for at least 1 hour up til overnight to get juices flowing. Add in drained pineapple tidbits or crushed pineapple, chopped apples, grapes, chopped pecans, marshmallows (optional) and stir well. Whip heavy cream to stiff peaks and fold into fruit mixture. No need to sweeten as the sugar is plenty. Serve cold. This is even better the second day when the nuts soften a bit...at least we like it that way a lot. Enjoy!!
