Scalloped Potatoes & Ham 2 Boxes of Scalloped Potatoes from Aldi Prepare according to package directions Add chopped ham and a couple cups of cheese. Bake at 425 degrees for about 35-40 minutes, stirring once early on. Allow to rest for 5-10 minutes before serving. Hotdish with Ground Meat 1 lb. hamburger or ground venison chopped onion and green pepper, to taste 1/2 c. uncooked rice (minute) salt and pepper to taste Mix together and form into pretty large meatballs. Place in greased large casserole dish. cubed potatoes and carrots, about 3 of each Arrange around meatballs. 1 can green beans w/juice Pour over meatballs and vegetables. Mix together 1 can tomato soup and 1 can water. Pour over all. Cover and bake at 350 degrees for 1 hour. Take cover off and bake an additional 30 minutes. Drain. Add in onion and gr. pepper. Stir around for a little bit. Grease casserole dish and dump in sauerkraut, water, rice, beef broth and stir. Add in beef mixture and stir to combine. Top with tomato sauce and pepper. Cover and bake at 350 degrees for 1 hour. Uncover and bake 30 minutes more or until rice is tender. Oven Venison Stew 2 c. each, venison stew meat, carrots and potatoes (I usually go heavy on the meat) 1/2 c. chopped onion 1/2 c. chopped celery (a couple of ribs) 4 tsp. tapioca 1-3 Tbsp. brown sugar 1 1/2 tsp. salt 12 oz. tomato juice or V8 4 oz. (1/2 c.) beef broth Mix all in a dutch oven and bake for 2 1/2-3 hours. Stir hourly and add a little more liquid if needed. Serve with good crusty bread. Cranberry Poppy Seed Loaf 2 1/2 c. flour 3/4 c. sugar 2 T. poppy seeds 1 T. baking powder 1 c. milk 1/3 c. melted butter 1 egg 1 t. vanilla 2 t. grated lemon or orange peel 1 c. (or more) cranberries, chopped if you prefer Grease loaf pan 8 1/2 x 2 1/2 or 2 smaller ones. Mix dry ingredients in a bowl. In another bowl blend all wet ingredients. Stir into flour mixture. Fold in peel and cranberries. Spread in prepared pan and bake at 350 degrees for 60-70 minutes or until toothpick comes out clean. Drizzle with powdered sugar and milk glaze. Cranberry Bundt Cake 1 pkg. yellow cake mix 1 pkg. instant vanilla pudding (4 oz.) 1/2 c. vegetable oil 2 c. fresh cranberries, chopped if you prefer 3/4 c. nuts 4 eggs Mix all ingredients except berries and nuts. Beat 2 minutes with electric mixer. Add cranberries and nuts. Pour into greased bundt pan. Bake at 350 degrees for 50 minutes or until toothpick comes out clean. Cool in pan for 10 min. before removing to wire rack to cool. Dust with powdered sugar or make a thin glaze and drizzle over.
