Seasoned Egg Bake (cookbook vol. 2, pg. 35) 1/2 stick butter 1 (6 oz.) pkg. seasoned croutons 8 oz. sharp cheddar cheese, shredded 8 eggs 2 c. milk 1/2 tsp. mustard 1 pkg. bacon Melt butter in 9x13 glass baking dish. Spread croutons and cheese over butter. Beat eggs, milk and mustard and pour over croutons. Cover and refrigerate overnight. Cook and crumble bacon. Sprinkle on top and bake (uncovered) at 350 degrees for 35 minutes or until knife inserted near center comes clean or eggs are set to your liking. Cool for 10-15 minutes before serving so that it slices and serves nicely. Sausage, Cheese, and Potato Egg Casserole I used colby jack cheese, 1/2 tsp. salt and 1/4 tsp. pepper https://www.twopeasandtheirpod.com/sausage-cheese-and-potato-egg-casserole/ Ham & Veggie Egg Bake I used 10 eggs, 2 c. cheese, 8 slices of bread. For the mix-ins I used broccoli, mushrooms, gr. onions, cubed ham https://www.simplyrecipes.com/recipes/as_you_like_it_breakfast_casserole/ Miniature Cheesecakes 3 (8 oz.) pkg. cream cheese, room temp 2/3 c. sugar 3 large eggs 1 T. vanilla extract Vanilla wafer cookies 1 can pie filling Cream first four ingredients thoroughly!! I like to mix the cream cheese until very creamy and then add sugar and then mix very well each egg before adding the next. The goal to have NO lumps. But lumps happen and they'll still taste delicious. Place one cookie wafer in the bottom of each paper muffin liner. This will make 24. Then using a muffin scoop divide the mixture into 24 muffin liners. Bake at 350 (for silver pans) or 325 (for dark pans) 20-25 minutes until puffed and a few cracks. Do not overbake. Mine usually take about 22 minutes. Cool slightly in muffin pan before transferring to wire rack to cool. Cool completely; then top with your favorite pie filling. These are amazing any time of day.
