Vegan Gyros and an Artichoke Heart Recipe for the Perfect Greek Night at Home Today I have two recipes for you, a gyro style baked tofu and a baked artichoke heart dish. Both are sugar and flour free so are compliant with Bright Line Eating. But even if you don't follow Bright Line Eating, these recipes are still delicious and still 100% vegan. And as always, they're also 100% easy. Gyro Tofu Marinade 1/4 cup water 2 Tbsp soy sauce 1/4 cup tomato sauce 1 tsp Dijon mustard 1/4 tsp each of garlic powder, cinnamon, black pepper 1/2 tsp each of ground coriander and cumin 1 tsp oregano 400 degree oven for 15 minutes, flip, then cook another 10 minutes. Artichoke Bake 1/2 yellow onion sliced 1 Tbsp garlic minced 1/2 cup white wine 2 tomatoes large dice 1 can artichoke hearts 3 strips lemon zest finely diced 2 heaping tablespoons sliced olives 1 Tbsp basil salt and pepper to taste 2 Tbsp each capers and caper juice Juice from 1/2 a lemon 400 degree oven for 25 minutes covered.
