Three Sisters Recipe | Easy Plant Based Thanksgiving Recipe This is the perfect recipe for a vegan Thanksgiving, or really any time during fall. It's beautiful with all the colors of fall in one dish, and as a bonus it's also easy to make. It's also a Bright Line Eating friendly meal since it has no sugar and no flour. To modify it for a grain free meal, simply leave out the polenta and put the filling into an acorn squash instead. INGREDIENTS For Filling: 1 onion diced 1 Tbsp garlic minced 1 red bell pepper diced 2 cups butternut squash 1 can diced tomatoes (15 oz) 1 can pinto beans 1 cup corn 1.5 tsp rosemary ground up in a mortar and pestle 1/2 tsp cumin 1/8 tsp cayenne pepper salt/pepper to taste For Polenta: 4.5 cups water 1.5 cups polents 1/2 tsp oregano salt/pepper to taste DIRECTIONS For Filling: 1. Water sautee onion and garlic over medium heat until onion is soft and slightly brown 2. Add bell pepper and sautee until bell pepper is soft 3. Add spices and stir to combine with onions and peppers and toast a bit, then add the tomatoes and squash 4. Cover and cook until the squash is fork tender 5. Uncover and stir in beans and corn 6. Continue cooking and stirring occasionally until most of the liquid is cooked off and the mixture is thickened. For Polenta: 1. Bring water to a boil over high heat then add polenta and stir constantly for 2-3 minutes 2. Reduce heat to low and add seasonings 3. Cook on low to medium low (keep mixture simmering) for 15-20 minutes stirring occasionally and adding water as needed if mixture becomes too thick Assembly and Baking: 1. Lightly spray a 9 x 13 Pyrex dish with oil (optional, can leave out if WFPB) 2. Place a thin payer of polenta in the bottom of the dish 3. Next, spread all of the filling evenly over the polenta and top with the remaining polenta 4. Bake at 375 degrees F for 30 minutes uncovered 5.
