The Best Butternut Squash Soup You'll Ever Make | The Perfect Thanksgiving Side Dish I have been making this soup for Thanksgiving for about 10 years now and it is so delicious that people talk about it long after the holidays are over and always ask me to make it again the next Thanksgiving. You seriously can't go wrong with this soup. It's always a big hit! INGREDIENTS 1 large butternut squash 4 cups water 1 tablespoon better than bouillon 1 medium yellow onion diced 1/2 bunch cilantro 2 large oranges (zest and fruit) 1/3 cup unsweetened coconut flakes 1/4 cup Serrano pepper diced Salt to taste DIRECTIONS Soup 1. Cut the squash into 4 pieces and roast for 45 minutes in a 475 degree oven or until fork tender. 2. Let squash cool then peel the skin off of the meat. 3. In an Instant Pot or a pot on the stove water saute the diced onion on high heat until soft. 3. Once the onion is soft, add the squash, water, and better than bouillon. Use your spoon to break up any big chunks of squash. 4. Add the zest and fruit of 1 orange into the soup and salt to taste. 5. Continue cooking the soup on high or medium high until soup is hot and the flavors are combined. 6. Use an immersion blender, high speed blender, or food processor to blend the soup to a smooth consistency. If using a blender or food processor, blend in small batches and use care when blending hot foods as they can explode out of the appliance. Once the soup is blended, keep warm until ready to serve. Pesto 1.Add the cilantro, coconut flakes, Serrano pepper, and the zest and fruit of 1 orange to a food processor and blend until you get your desired consistency. 2. Serve soup with a large spoonful of pesto in the middle and then stir to combine before enjoying.
