Stir in sour cream and half of the Cool Whip. In your container, put down a double layer of Nilla wafers then cover the wafers with pudding mix. Layer sliced bananas on top of the pudding mix. Repeat sequence (wafers, pudding, bananas) until you reach the top of the container. Top with the remaining Cool Whip. Sprinkle crushed Nilla Wafers on top. Store in your cooler for up to 4 days. S’mores Brownies 1 box brownie mix 1/4 cup graham cracker crumbs 1/2 cup water 1/2 cup oil 1 egg 1 cup semi-sweet chocolate chips 2 cups miniature marshmallows Preheat oven to 350ºF. Combine brownie mix, graham cracker crumbs, water, oil and egg. Mix by hand for 1 minute. Spread batter into a 9x9 pan. Bake for 22-25 minutes, just until a toothpick inserted comes out clean. Remove from the oven and top with chocolate chips and marshmallows. Place the brownies in the broiler for 30 seconds or until the marshmallows are lightly brown. BE CAREFUL with marshmallows in the broiler; keep a close eye on them and rotate the pan halfway through. Cut cooled brownies into bars and place in an airtight container or plastic bag and store in your cooler. Raspberry Crumble Bars 1 1/2 cups all-purpose flour 1 cup rolled oats 1/4 tsp baking soda 1/4 tsp salt 1/4 tsp cinnamon 3/4 cup unsalted butter, melted 1/2 cup light brown sugar 1/4 cup granulated sugar 1 tsp vanilla extract Preheat oven to 350ºF. In a medium bowl, whisk together flour, oats, baking soda, salt, and cinnamon. In another bowl, whisk together melted butter, light brown sugar, granulated sugar, and vanilla. Add dry ingredients to wet ingredients and fold until incorporated. Set aside 3/4 cup of dough for topping. Press remaining dough evenly into the bottom of an 8x8 baking pan and bake for 14-16 minutes, until lightly golden. Cool for 15 minutes. Spoon raspberry jam over crust and crumble reserved dough on top. Bake for another 40-42 minutes or until topping is golden. Cool completely and then cut into squares. Store in an airtight container in your cooler for up to 3 days. Cinnamon Roll Dump Cake 2 cans cinnamon rolls 1 container cream cheese frosting 3/4 cup chopped pecans (optional) 1 package cinnamon swirl or coffee cake mix 3/4 cup butter, sliced into thin pieces Preheat oven to 350ºF. Open your cinnamon rolls and reserve the icing. Using a knife or kitchen scissors, cut the rolls into 1-inch pieces and place in a single later into a 9x13 baking pan. Microwave the cream cheese frosting for 25 seconds, stir until smooth, and pour over the cut cinnamon rolls. Optional: sprinkle chopped pecan on top of the frosting layer. Sprinkle the dry cake mix on top. Place the butter slices on top of the dry cake mix. Bake for 40-45 minutes until the top is golden brown. Cool for 10 minutes and then drizzle the reserved icing over the top. Apple Crisp Foil Packets For the Apples: 6 cups apples (any variety) 3 TBS light brown sugar 1 TBS granulated sugar 1/2 tsp nutmeg 1/2 tsp all spice 1 tsp cinnamon For the Crisp: 1¼ cup all-purpose flour ¾ cup light brown sugar ¾ cup quick oats 1 stick salted butter 1/2 tsp cinnamon 1/2 tsp nutmeg Caramel sundae topping (optional) Peel, core, and thinly slice apples. In a medium bowl, toss together the apples, light brown sugar, granulated sugar, cinnamon, nutmeg, and all spice. In another bowl, stir together flour, brown sugar, oats, cinnamon, nutmeg, and melted butter. Scoop 1 cup of the apple filling onto the middle of an aluminum foil square. Scoop 1/2 cup of the topping on top of the apple. Fold the long sides of the foil together, then fold the ends toward the middle. Place the packets on the fire pit grate or on 2-3 inches of hot coals. Allow to cook for 20 minutes. Remove the packs and let them rest for 5-10 minutes. Optional: top with caramel sundae.
