This video is part of Uncle Scott's Learning to Cook With Carbon Steel series, and helps people who are new to carbon steel cooking get the most out of their new pans. The recipe: Marinate 1 - 2 pounds of chicken tenders in a mixture of 4 cups buttermilk, one tablespoon salt, and 1/4 cup of hot sauce for up to four hours in the refrigerator. Prepare a dredge of two cups flour, one teaspoon salt, one teaspoon pepper, and if you like your chicken tenders crunchier, one half cup of cornstarch. You may need a second dredge depending on your level of messiness and amount of chicken. Shake the excess buttermilk from the chicken, press it into the flour mixture and coat well, and lay the chicken out on a wire rack. Add peanut oil to a carbon steel pan, 1/3rd full (don't go over half full). Preheat the oil to 350 - 360 F. Carefully lay out the chicken tenders in the hot oil. Don't overcrowd the pan. Cook two minutes, then flip, and cook another two minutes, monitoring and adjusting for browning. When the tenders are up to at least 165F internally and have the brownness and crunch you desire on the outside, remove them to a wire rack. Repeat with remaining chicken. Devour!
