It makes it super easy to swap into cocktails or sodas without messing up the balance. Why it tastes so good: I reduced the acetic acid (vinegar) a bit and replaced that missing acidity with citric acid solution. A lot of people find too much vinegar harsh, so I swapped some of that tang for the bright, juicy acidity we naturally associate with lemons. This gives you a more complex, refreshing mouthfeel — like a lemonade vibe instead of straight pickle juice. How to use it: For every 100 g raspberries, add: 67.5 g sugar 42.5 g water 2.1 g citric acid 82.5 g vinegar (7% strength) Macerate the fruit and sugar overnight to pull out all the berry flavor.
