How to Make Falernum at Home - Barbados Syrup for Tiki Cocktails

This week I’m going to show you how to make falernum at home. An essential and delicious Barbados syrup for tiki cocktails that will elevate any drink it's in. Falernum is a must have when it comes to tiki drinks. Just a half ounce of this stuff and your drinks go from meh to marvelous. There isn’t much variety to choose from at the liquor store, and the one that’s widely available leaves much to be desired. Making your falernum at home is the optimal choice because you can vouch for the quality of ingredients and can customize it to your preferences. For example, I am using key limes in my variation to compliment my vegan key lime pie milk punch. https://youtu.be/gNTAlgTuGh8 All you need to make your own is an overproof spirit - typically rum, ginger, almond, lime, sugar and cloves. The recipe I’m making in this video will yield 6 ounces. 3 oz Wray and Nephew overproof white rum Zest and juice of 10 key limes 2 tablespoons of fresh grated ginger 8 cloves 1/4 cup almonds (blanced & slivered) 1/4 tsp nutmeg 2 tbs turbinado sugar 3 tbs white sugar 3 tbs water Toast the cloves and almonds for 5 minutes until the almonds have turned golden. Set aside to cool. Peel and grate a 1.5 inch piece of ginger. Zest and juice 10 key limes- juice should yield almost 1/4 cup. Cover juice and store it in the fridge until the next day Combine both sugars and water in a pan over low heat until the sugar dissolves- set aside to cool and keep in the fridge until the next day. Grate 1/4 tsp of nutmeg. Add nutmeg, lime zest, ginger, almonds and cloves to a jar with a lid. Add 3 oz of over proof rum, screw on lid and shake. Set aside to infuse for 24 hours. The next day, strain out solids using a coffee filter. Combine infused rum with syrup and lime juice. This falernum should last at least a month. Keep in the fridge for optimal freshness.
