Filling the Freezer with 20 Freezer Meals (From Scratch!)

Meals Bulgogi: https://www.theseasonalhomestead.com/bulgogi-lettuce-wraps/ Stromboli: https://amzn.to/3Lmkh3m Chicken Enchiladas: https://www.inspiredtaste.net/11767/salsa-verde-chicken-enchiladas/ Hatch Chili Sauce: https://taoofspice.com/hatch-enchilada-sauce/ Meatloaf: 2 eggs, beaten 2/3 cup milk 3 Slices Bread, crumbled (about 150 grams) 1/2 cup cheddar cheese shredded (about 3 ounces) 1 medium onion, chopped 1/2 cup finely shredded carrot 1 teaspoon salt 1/4 teaspoon pepper 1 &1/2 pounds ground beef Bake at 350 degrees for 60- 75 minutes Lasagna (Double batch) Makes 2 9x13 pans 18- 24 uncooked lasagna noodles 1 pound ground beef 1 pound italian sausage 6 garlic cloves, crushed 2 quarts tomato juice 2 pints tomato sauce 2 tablespoons brown sugar 1 tablespoon fresh oregano, chopped 1 tablespoon fresh basil, chopped 2 1/2 teaspoons salt 1 teaspoon pepper (I used homemade cayenne but black pepper is good too) Cheese 32 ounces ricotta 2 eggs 1 tablespoon chopped mild greens from garden 1 cup parmesan cheese 4 cups mozzarella cheese Assemble tomato ingredients, then cheese ingredients. Layer noodles, tomato sauce, then cheese. Repeat. Bake covered 325ºF for 45 minutes, remove cover and bake another 15 minutes.
