Emptying the Freezer, Filling the Pantry

Our freezers are overflowing so we take our frozen harvests and turn them into pantry staples. We are making elderberry syrup, elderberry popsicles, lard, and canning spaghetti sauce using over 90 pounds of tomatoes. We also had an unexpected disaster with a wild animal. Amy’s Elderberry Syrup Recipe 3 cups elderberry juice 1 cup sweetener 1/3 cup bottled lemon juice Can according to Ball’s blueberry syrup recipe. Boil for 5 minites. Pour hot syrup into hot jars allowing 1/4 inch headspace. Boil for 10 minutes in a waterbath canner. Add any additional time needed for altitude adjustment.
