Salmon Rice Salad | Japanese Style with Tzatziki

This meal helped us lose over 50lbs. It's healthy af, delicious and super easy to make. Just 15 minutes and youre done. Full ingredients; - Half a Broccoli (cut into florets - Spring onion (trimmed for garnishing) - Small bowl of peas - Greek yogurt (probably 100ish grams) - 145g Cooked Rice - Half a cucumber (sliced) - 2 cloves of garlic (crushed) - ready to eat hot smoked salmon (2 fillets sliced up or flaked) Method Cook the broc and peas for 5 minutes and cook the rice per package instructions. Whilst the rice, broccoli and peas are cooking, cut your cucumber and add it to a large bowl with the yogurt, salt, pepper, garlic and whatever seasonings you like most. Mix them together to create a quick tzatziki. Once the broccoli and peas are cooked add them to the tzatziki. Do the same with the rice. Top with the salmon and spring onions. That recipe serves 2, adjust it however you like.
