We got these great carving pumpkins from Aldi for only $2.49 each! I wanted to make the most of the entire pumpkin, so after we made our Halloween jack o lanterns, I roasted the pumpkin seeds and made some pumpkin muffins with the innards. Using the pumpkin guts in baking can be tricky, and is best suited to bread and muffins over pumpkin pies, but done right is a fun way to use a part of the pumpkin that usually gets tossed in the trash! Once the spooky season is done, I'll toss my carved pumpkins onto my compost pile so that none of the pumpkin needs to end up in the landfill.
