We don't really do much of an Easter dinner in my house, but we do love our brunch! For this Dollar Tree Easter brunch, I limited myself to $5 of ingredients, plus some oil and spices from my pantry. Y'all will have to tell me whether what I made is really a quiche, or if it's actually a frittata, or even just a fancy omelet! This dish features a hash brown crust and uses water in place of milk or cream. Don't be scared off at the prospect of a Dollar Tree meal, this came out great! This cheap brunch dish is also fantastic for dinner, and would go perfect with a side of fruit or vegetables. I cut it into 8 pieces that were approximately 350 calories each. I hope everyone celebrating Easter has a wonderful holiday and gets to eat some super delicious food, even if you're on a tight budget!
