I love making new recipes and going back to old favourites in my day to day eating routine! Here's my healthy what I eat in a day, with some cozy meal ideas for fall featuring my annual butternut squash slow cooker recipe that I have adapted over the years! Made the rest of the bowl a salad with leftover yellow pepper, tomato, cucumber, and lettuce which had some oregano and oil sprinkled in PLUS I added rice vinegar DINNER RECIPE: Based off of Tasty's recipe linked here: https://tasty.co/recipe/slow-cooker-butternut-squash-soup I've changed it so much over the years that I will include my instructions below: - 1 medium butternut squash, peeled, seeded, roughly chopped - 3/4 medium yellow onion, roughly chopped - 1-2 granny smith apples peeled (I used 1 today) - a handful of carrot (I used three big carrots today) - a sweet potato (a new addition which I loved) - 3 cloves garlic - olive oil to drizzle - 3-4+ cups vegetable broth (720 mL) *I used chicken broth today - ½ teaspoon ground ginger - ½ teaspoon ground cumin - ½ teaspoon ground coriander (or dash of oregano, and parsley since I never have coriander available) - ½ teaspoon paprika - ⅛ teaspoon cayenne pepper (gives it a slight spice, but do less if it's not your thing) - 1-1.5 teaspoons sea salt - ¼ teaspoon black pepper (I just sprinkle as much as I think is enough) - ½ teaspoon fresh thyme (if using dry thyme like I did, add a dash extra) - ¼-½ cup coconut milk (60 mL) OPTIONAL GARNISHES * pumpkin seed * fresh chive, chopped * greek yoghurt Preparation * Add the chopped butternut squash, onion, apple, carrots, sweet potato and garlic to a slow cooker. Drizzle with olive oil and add vegetable/chicken broth, ginger, cumin, coriander (or sub), paprika, cayenne, dry thyme, salt, and pepper. * Cover and cook on high heat for 4 hours until all veggies are soft * Using a hand blender, blend the ingredients until smooth, or transfer to a standard blender or food processor and carefully puree until smooth * Add the thyme (if you're using fresh but use earlier if dry) and coconut milk and blend to incorporate. * Garnish with pumpkin seeds, chives and dollop of greek yogurt, if desired.
