In this video, I make a pumpkin pie using Guatemalan ayote that we grew in our garden this year. Ayote is a butternut type winter squash that you can substitute for pumpkin in any recipe. It's flavor sweet, earthy, and nutty, but is a bit drier than most winter squash, so you may need to reduce the amount of squash by weight and add extra liquid to your recipe to have the same texture as the original dish.
