Simple to use, effective, long-lasting, but absorb oils and smell rancid over time. It contains a total of 1lb 2 oz of pie weights or about 513 g. Each ceramic ball is about 10mm in diameter or 0.4 inches and is unglazed with a slightly rough texture. Before use, be sure to quickly rinse them to remove any dust residue from manufacturing, then bake them at 400°F for 10 minutes to dry. When using them to weigh down a blind-baked pie crust to prevent bubbling up, you do not want to place the weights directly in your crust to bake. Instead line the crust first with parchment paper or foil. Not only will this make it easier to remove the pie weights later, but it should also keep them a little cleaner. The amount of weights from one container is just barely enough to cover the bottom of a 10” pie plate in a single layer. For extra large pies or if you want to fill the plate up to the top so the weights are also against the sides, you’ll need 2 or even three sets of weights. I like to par bake my crusts at 425°F for 20 minutes. Then remove the weights and parchment paper, protect the edges with a pie shield, and bake again for 20 minutes at 325°F for 20 minutes. The crust is fully cooked and ready to fill when it is golden brown all over. If you didn’t line your pie crust first, you’ll end up with little divets all over your crust where the weights sank into the crust as it softened in the heat of the oven. Since the weights are porous, unless you only use foil and are super careful, they will likely absorb some of the oil from the crust over time, causing them to darken and eventually smell rancid. Repeated use of the weights though can polymerize the trapped oil and reduce the odor over time, and these weights can be reused over and over. Overall, the pie weights do their job to ensure my pie crusts hold their shape and prevent air bubbles, though you may need more than 1 lb of weights depending on the size of your pie.
