Ingredients: - 2 1/4 - 2 1/2 cups all purpose flour - 1 packet of RapidRise Yeast - 1/2tsp kosher salt - 1/2 cup milk - 1/4 cup water - 2tbsp salted butter - 1/4 cup honey Topping: - 1/4 cup salted butter - 1 1/2tbsp honey Directions: Use the paddle attachment in a mixing bowl. Combine 1 cup flour, yeast, and salt. Mix for 1 minute. Meanwhile in a microwave safe bowl, combine milk, honey, butter, and water. Microwave for 30 second increments or until the butter has melted and the liquid mix is warm but not hot to the touch. Add the liquid to the flour mixture and mix for 2 minutes. Add another 1/2 cup of flour every 2 minutes until the dough starts to form a ball. You may be left with 1/4 cup of flour but that is ok! Replace the paddle with a dough hook. Knead the dough for 6-8 minutes or until the dough springs back when pressed with your finger. Cover the bowl with a towel and let rest for 10 minutes. Cut the dough into 12 equal size pieces and roll into perfect balls. Place the dough balls into a greased 8" cast iron pan. Cover the pan and place in a warm area for 30-40 minutes, or until the dough has doubled in size. Bake the rolls in a 375°F oven for 20 minutes or until golden brown. Remove from oven. While the bread is cooling, melt the butter and honey in the microwave for 30 seconds. Brush the honey butter onto the top of the dinner rolls. Serve & Enjoy :)
