Ingredients: Roasted Tomato Basil Soup- - 3lbs plum & vine ripened tomatoes, halved lengthwise - 28oz can whole plum tomatoes, juice included - 4 cups chicken or veggie stock - 2 small yellow onions, chopped - 6 cloves garlic, minced - 1 cup fresh basil - 1tsp fresh thyme - 1/4tsp red pepper flakes - 2tbsp butter, unsalted - olive oil - salt & pepper, to taste - cream or sour cream, garnish (optional) 3 Cheese Grilled Cheese Sandwich- - 2 slices sourdough bread - olive oil or butter, for toasting - 2 slices American cheese - 2 slices cheddar cheese - 2 slices pepper jack cheese Directions: Roasted Tomato Basil Soup- Preheat oven to 400ºF. Toss the fresh tomatoes with olive oil, salt, and pepper and spread onto sheet pan. Roast in oven for 45 minutes. Remove and set aside. Heat a Dutch over medium high heat and add 1tbsp of olive oil and the butter. Pour in the onions, garlic, basil, thyme, red pepper flakes, & salt. Sautee until the onions are translucent. Add the canned tomatoes (juice included), roasted tomatoes, & stock to the Dutch oven. Bring up to a simmer and cook for 40 minutes. Using your Acekool Emulsion Blender, blend the soup until smooth and no chunks remain. Simmer on low for 10-15 minutes longer. 3 Cheese Grilled Cheese Sandwich- Heat a frying pan over medium high heat and add 1tbsp olive oil or butter. Toast one side of the sliced sourdough bread. Once toasted, place the 3 cheeses onto the untoasted side of the bread. Place the opened faced cheese bread onto a sheet pan in the oven and broil until cheese is melted and begins to bubble. Remove and combine the 2 slices of bread. Serve & Enjoy :)
