Melt butter in microwave. Combine melted butter, 1 cup almond flour, 1/4 cup swerve, and a pinch of salt in bowl. Mix well. Pour mixture into a 8x8 baking dish lined with parchment paper. Spread mixture evenly to cover bottom of dish. Bake in oven for 20 minutes. Remove from oven a let cool for at least 10 minutes. FILLING- In a bowl, zest 1 whole lemon, and then juice all 3 lemons. Add eggs, 3/4 cup swerve, 3/4 cup almond flour, and a pinch of salt. Mix well. ASSEMBLY- Pour filling into pie crust and bake in 350ºF oven for 25 minutes. Remove from oven and let cool. Remove lemon bars from dish and sprinkle with swerve. Slice into squares. For best results, refrigerate lemon bars for a couple hours before serving! Serve & Enjoy :)
