Subscribe to our channel here: http://bit.ly/2zzR6BV Follow our Instagram here: http://bit.ly/2AyxPkb Like us on Facebook here: http://bit.ly/2Pa72zC Ingredients: * 1 1/2 lbs chicken breast, cubed * 2tbsp Masaman curry paste * 1 cup jasmine rice * 2 tbsp fresh ginger, minced * 2 medium sweet potatoes, cubed * 2 medium Russet potatoes, cubed * 1 large yellow onion, large diced * 1 13oz can coconut milk * 1/4 cup peanut butter, creamy * 3 tbsp fish sauce or soy sauce * 2 tbsp brown sugar * 1 lime * 2 tbsp canola oil * roasted cashews, garnish * green onion, garnish Directions: Jasmine Rice- Place 1 cup of jasmine rice and 2 cups of water in a medium sauce pan. Bring to a rolling boil. Cover sauce pan with a lid and reduce to heat to low simmer. Simmer for 20 minutes. Remove lid and fluff rice with a fork. Masaman Curry- Heat a large wok on stove over medium high heat. Heat canola oil and add ginger. Sauté for 1 minute. Add Masaman curry paste and sauté until aromatic. Add in chicken and sear until all sides of chicken are white. Pour in coconut milk. Add in sweet potatoes, pototoes, and onion. Stir in peanut butter, fish sauce, and brown sugar until evenly mixed. Cover wok with lid and simmer on medium low heat for 25-30 minutes. Remove lid. Squeeze the juice of half of a lime into curry and mix well. Cook curry uncovered for an additional 5 minutes. Remove from heat. Garnish curry with chopped cashews and sliced green onion. Serve & Enjoy :)
