Line a baking sheet with parchment paper. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the all-purpose flour, cake flour, baking powder, baking soda, and salt. Add the dry ingredients to the wet mixture and stir until just combined. Fold in the dark chocolate chips, chopped dark chocolate chunks, and chopped dried sour cherries. Using a cookie scoop or spoon, drop the dough onto the prepared baking sheet, spacing them about 2 inches apart. Sprinkle a pinch of flaky sea salt on top of each cookie.
