Welcome back to Week 4 of the #EveryBitCountsChallenge! 🌱 This week I’ve been working hard to preserve something every single day of August — from canning and freezing to dehydrating and more. Each small step adds up, and by the end of the month, the pantry is full and ready for the seasons ahead. ✨ In this video, I’ll show you exactly what I preserved this week and share some tips along the way. 📌 RECIPE CANNED TOMATOES Can in PINT jars with forjar canning lids and jars SHOP - ORMSBY10 CANNED ROTEL - [ ] Mix tomatoes with bell peppers and onions - [ ] Add 1tsp Salt and 1tsp fajita seasoning along with 1/4tsp citric acid Can in 1/2 PINT jars with forjar canning lids and jars https://tr.ee/f8XqzkyrL - ORMSBY10 MAC AND CHEESE IN JAR (DRY) https://www.makeaheadmealmom.com/meal-jar-mac-cheese/ MAC AND CHEESE IN JAR (WET) from friend Tamara @llhomestead1985 The recipe that I use for canning mac-n-cheese isn't healthy by any means 🤣 but here it is: 1 #10 can of regular liquid cheese or nacho cheese (if you want a lil heat) Elbow macaroni Pour the cheese into a large pan and add 3/4 of the can with water, warm it up, don't boil it. Pour 1/4C. Macaroni in pint jars or 1/2C. in quart jars. Working with 1 jar at a time use a handled pitcher or LG measuring cup to scoop up the warmed up cheese sauce. Leaving a 1" headspace pour the sauce into the jar, immediately stir the sauce and noodles, because they will clump if you don't stir quickly, add more sauce if needed. Do the rest of the jars one by one. Wipe the rims with hot water rag/paper towel, do NOT use vinegar, it can curdle the cheese sauce. Place warm flats and then rings on fingertip tight. Process in a prewarmed PC @10#'s(or your altitude) for 20mins. Clean jars after sitting for 24hrs and take the rings off. I just used my last quart this year from 2021 and it was still delicious. Mix dry ingredients: In a large bowl, whisk together the flour, salt, baking powder, and sugar (if using). 2. Add liquid fat: Pour the vegetable oil into the bowl and stir gently with a fork until the oil is evenly distributed and the mixture resembles coarse meal. 3. Add liquid: Stir in ½ cup of cold water until the dough just starts to come together. If needed, add the remaining water one tablespoon at a time until the dough is moist enough to form a ball. 4. Form the dough: On a lightly floured surface, gently press the dough together to form a disc. Do not knead.
