Set your Instant Pot to sous vide for 24 hours. Medium-rare: 130°F to 134°F. When done, remove from the bag, pat dry, and sear the steak on all sides in an oiled cast iron skillet over medium-high heat, lower the heat to medium and basted with butter. When done, remove the chuck steak and place it on a cutting board and let it rest. While the seared chuck steak is resting, make a delicious au jus from the drippings in the pan and serve it with the chuck steak.
