Today we're making a delicious, mildly spicy pork and vegetable stir-fry with fried rice and mushrooms for dinner. We sliced our pork from a pork loin, then marinated the pork to make it very tender, sliced some peppers and onions, added straw mushrooms, and stir-fried everything in minced garlic and a tasty, mildly spicy soy sauce mixture, combining all the flavors together. Let it warm up. Now add the sliced marinated pork to the hot pan and stir-fry quickly until done to your liking. Add salt and pepper to taste. Turn off the burner, remove the pork, and place it in a bowl; set aside for later. In the same pan, set the burner to medium-high, add a little more oil if needed, and add the mixed vegetables and the stems of the green onion, and quickly stir-fry them. Don't overcook the vegetables, then add the straw mushrooms and add some rice wine (optional), and continue to stir-fry the vegetables for 1-2 minutes; when done, remove it from the pan and place it in a bowl; set aside for later. Next, in the same pan over medium heat, add a little more oil if needed and stir-fry the precooked rice with the soy sauce mixture. Mix until the rice is an even color, lower the heat to medium-low and move everything to one side of the pan, and add in a little more oil, then add in the beaten egg mixture and lightly scramble the eggs, when the eggs are done add in the frozen peas and carots mix everything together, then add the pork back in and mix together, then add in the leafy part of the green onions and combine everything together and you're done.
